For this specific case, the user needs to have full Object permissions over the BDC Model, the External Content Type and the External System.  Metadata Store Permissions are needed as well.

Both sets of permissions can be configured from Central Administration → Application Management → Manage Service Applications → Business Data Connectivity Service

For each element in the toolbar's dropdown (Externa Content Types, BDC Models and External Systems) select both Set Object Permissions and Set Metadata Store Permissions and configure the user that executes the crawls.
